Coral lentil pancakes

Ingredients
  

  • 220 g coral red lentils
  • 3 potatoes
  • 2 shallots
  • 1 clove garlic
  • 1 egg
  • 2 teaspoon cornstarch
  • 2 teaspoon curry
  • 2 teaspoon paprika
  • 2 teaspoon Cayenne pepper
  • olive oil
  • salt and pepper

Instructions
 

  • Peel and cut the potatoes into small dice. Cook them with the coral lentils in a pan of salted boiling water for 10 minutes.
  • Peel and chop the shallots and garlic. Mix everything with the potatoes and drained lentils
  • Beat the egg with all the spices in a bowl. Add the cornstarch then the vegetable puree and mix well. Add salt and pepper.
  • Heat a drizzle of olive oil in a pan. Take small heaps of the lentil preparation and place them in the pan. Cook 4 to 5 minutes on each side
