Coral lentil pancakes
Ingredients
- 220 g coral red lentils
- 3 potatoes
- 2 shallots
- 1 clove garlic
- 1 egg
- 2 teaspoon cornstarch
- 2 teaspoon curry
- 2 teaspoon paprika
- 2 teaspoon Cayenne pepper
- olive oil
- salt and pepper
Instructions
- Peel and cut the potatoes into small dice. Cook them with the coral lentils in a pan of salted boiling water for 10 minutes.
- Peel and chop the shallots and garlic. Mix everything with the potatoes and drained lentils
- Beat the egg with all the spices in a bowl. Add the cornstarch then the vegetable puree and mix well. Add salt and pepper.
- Heat a drizzle of olive oil in a pan. Take small heaps of the lentil preparation and place them in the pan. Cook 4 to 5 minutes on each side
